The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 3/6/2020. As a result of that inspection, and due to the severity of the specific violations the Crescent Lodge in Cresco, Monroe County was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Deli Meat slicer,a food contact surface, was observed to have food residue and was not clean to sight and touch.
  • Lights are not shielded or shatterproof over the ware wash area.
  • Observed 2-1/2 gallons whole milk with a sell by date of 2/26 available for use in refrigerated units. Milk was voluntarily disposed of at the time of this inspection.
  • Several raw animal foods were stored above ready to eat foods in the walk-in cooler.
  • Commercially processed refrigerated, ready to eat, time/temperature control for safety deli meat, located in the walk-in cooler, and held more than 24 hours, is not being marked with the date it was opened.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate quaternary sanitizer concentration in bar area.
  • Observed old water line capped causing a “dead leg” plumbing line in need of removal.
  • Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food.
  • The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed build up of old food residue on internal surfaces of cook line microwave oven.
