The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 9/8/2020. As a result of that inspection, and due to the severity of the specific violations the Pocono Brewery Company was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 11 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk in cooler, is not being date marked.
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher behind the main bar was 0 ppm, and not 50-100 ppm as required. Machine was primed and residual was detected at 100ppm at the time of this inspection.
  • Common bowls observed being used as scoops in bulk ingredients.
  • Observed beef thawing at room temperature, which is not an approved thawing method. Beef, which was out for less than 1 hour, was moved to thaw in walk in cooler at the time of this inspection.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration of chlorine and quaternary sanitizers.
  • Observed 5-10 small flying insects around drains in main bar area.
  • Observed one dead insect on top of covered, thawing fish in walk in cooler.
  • Working containers in bar area, used for storing chemicals/cleaners taken from bulk supplies, were not marked with the common name of the chemical.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed racks above the cook line bane marie and around edges of cook line bane maries with an accumulation of old food residue on non-food contact surfaces with potential to contaminate foods in need of more routine cleaning.
  • Observed clean cutting boards stored near the cook line directly on the floor, and not 6 inches above the floor.
  • No sign or poster posted at the handwash sink in restrooms to remind food employees to wash their hands.
