The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 8/13/2020. As a result of that inspection, and due to the severity of the specific violations the Boulder View Tavern was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 11 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed build up of old food residue and debris on multiple refrigeration units, shelving, and the floors under the shelving throughout food facility
  • Exterior surfaces of Kitchen Aid mixer observed with buildup of old food residue and in need of more frequent cleaning.
  • Observed build up of old food residue on exterior surfaces of bulk flour and breadcrumb containers.
  • Old food residue observed in the kitchen handwash sink, indicating uses other than handwashing.
  • The handwash sink in the kitchen area was blocked and not accessible at all times for employee use.
  • Observed window fan/window sill above the clean dish area of ware washing machine is dirty and dusty and is in need of more frequent cleaning.
  • Exterior surfaces of dish machine observed with build up of dust and old food residue and is in need of more frequent cleaning.
  • Observed a fan near the cook line in kitchen area with a buildup of static dust and is in need of more frequent cleaning.
  • Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours is not being date marked.
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Repairman was contacted to fix machine. All dishes sanitized in the 3 bay sink until dish machine in fixed.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed trash/cardboard stored outside the food facility and not in the closed waste handling units.
  • Ceiling is leaking water in basement area below dish machine, and is in need of repair.
  • Interior surfaces of multiple microwaves throughout facility, all food contact surfaces, observed to have old food residue and were not clean to sight and touch.
  • Observed single-service, single-use articles stored in basement area directly on the floor, and not 6 inches above the floor.
  • Paper towel dispenser empty at the handwash sink in the kitchen area.
