15 violations-Monsalva Cuisine in Jenkintown bumbles inspection; Utensils on cooks line stored in standing water- bacteria growth risk

The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on 6/29/2020. As a result of that inspection, and due to the severity of the specific violations Monsalva Cuisine was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 15 violations were found and include one or more violations determined to be food borne illness risk factors.

The inspector made the following comments in support of the violations found during the inspection:

  • Sign stating inspection reports available upon request not posted in public view. Sign emailed to facility during inspection.

  • Facility is lacking a written vomit/fecal incident procedure at time of inspection. Sample document emailed to facility.

  • Employee beverage stored on prep table.

  • No cold water provided at employee restroom hand wash sink. A 24 hour follow-up inspection pending repairs will be conducted to ensure sink is operating properly.

  • No paper towels provided in customer bathroom.

  • Raw shell eggs stored above ready to eat foods in walk-in refrigerator.

  • Tamarind sauce and cut lettuce in cook’s line prep refrigerator recorded with internal temperature of 61F. Facility voluntarily discarded during inspection.

  • Cook’s line prep refrigerator observed with ambient temperature of 50F. Facility voluntarily discarded TCS foods. Facility must immediately stop using the unit. Facility may not use the unit until serviced by licensed professional, AND unit is operating at 41F or below, AND written permission is granted by MCOPH. Send service report to the email provided. Failure to comply or await permission before using unit may lead to legal action.

  • Sticky fly strip hanging over 3 compartment sink shelving.

  • Utensils on cook’s line stored in standing water.

  • Cutting boards stored behind prep sink faucet.

  • Duct tape used to seal seams around facility 3 compartment sink. Provide smooth, non-porous, easily cleanable surface.

  • Facility lacking quaternary test trips.

  • A covered trash can needs to be provided in employee restroom.

  • Customer bathroom door needs to be made self-closing.
