17 inspection violations for PJ Whelihans in West Lawn; Ice machine in kitchen has pink film/mold around drop chute area, Ice level pad and sides of deflector plate

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 3/4/2020. As a result of that inspection, and due to the severity of the specific violations the P.J. Whelihan’s Pub + Restaurant in West Lawn was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 17 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • An open employee’s beverage container was observed in cook line area, a food preparation area. Corrected however this is a repeat violation.
  • Salad bain marie is leaking condensate water into bottom of bain marie where bagged salad foods and dressings are stored. Corrected by removing and discarding products that were in water. Also walk in freezer has condensate ice damning on lines above food storage racks dripping onto stored food. Corrected by moving food items until repaired.
  • Observed vacuum packed tuna thawed in cook line refrigerator in the vacuum packaging which is not an approved thawing method for vacuum packed seafood. Corrected by discarding
  • Silverware was run through hot water sanitizing machine before proper hot water temperature was reached. Corrected by running silverware again when water was tested to be hot enough to sanitize.
  • Pans on clean dish rack, a food contact surface, was observed to have food residue wash residue and were not clean to sight and touch.
  • The hand wash sink located in the bar area does not have water at a temperature of at least 100°F. Water heater is not functioning properly at this time. Repair done while on site.
  • Beer walk in cooler floor is buckled at all seams allowing for water/debris to possibly get under flooring.
  • Facility Grease trap is backing up into large floor drain basin in kitchen leaving large amounts of food residue laying in drain. Service is scheduled for clearing lines.
  • Severely dented, distressed canned items observed in can rack are and intended for use or sale in the food facility. Corrected.
  • Plastic utensils used for cooking are deformed/chipped and misshapen from heat, and are not durable under normal use in the food facility. Corrected.
  • Mechanical ware washing equipment has a lime buildup observed inside and on exterior of machine as well as dirt and debris on top of machine. Nozzles of pre-wash hose at sink and machine have a residue build up around nozzle head and handles. Corrected by cleaning nozzles. Machine to be delimed.
  • Caulking at the wall of the pre-wash sink and drain board area in ware washing room has mold/dirt build up and must be repaired.
  • Racks in walk in cooler have food debris, dust/mold, old duct tape on shelves and must be cleaned.
  • Observed standing water on floor next to prep sink and also large amount of food debris in drain basin under prep sink.
  • Ceiling vent and tiles around vent area of the food facility are extremely dirty, dusty, and in need of cleaning in kitchen areas and walk in cooler fan box.
  • A working container of *cleaner / sanitizer* was stored above or on the same shelf with food, equipment, and/or single service articles in the waitress station area. Corrected.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed clean food equipment and/or utensils in kitchen area, stored uncovered or not inverted. Corrected.
  • Observed clean food equipment and/or utensils in clean dish rack area and bar glass shelf, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).*
  • Drain line of prep sink is extended into floor and does not have a proper air gap.

* Wet nesting refers to the practice of placing two recently-washed items together in a nested fashion, preventing proper airflow. In a moist, dark, low-air environment, unseen bacteria grows unchecked, and suddenly that mixing bowl is a biological incident waiting to happen. Even at high temperatures, the food or ingredients you place on that wet-nested kitchen equipment can act as an accidental insulator, or even as fuel for further bacterial growth.
