The Allegheny County Health Department’s Food Safety Program conducted an unannounced retail food inspection on 6/8/2020. As a result of that inspection, and due to the severity of the specific violations the Quik-It Chicken at Valero Fueland was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 19 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- No cooling charts for cooked yams and precooked chicken in the walk-in cooler. No evidence of temperatures abuse.
- Collared greens in the hot-holding unit noted at 120° F in the center and greater than 135° F on the outside of the pan. The operator stirred the item and it reached at least 135° F.*
- Lack of thermometer in the walk-in cooler
- Lack of thermometer in the shorter merchandizing cooler containing pre-portioned sides.
- Lack of date-marking for pre-portioned sides in the shorter merchandizer cooler and prepared yams and cooked chicken in the walk-in cooler.
- Employee observed handling ready-to-eat ribs with bare hands, placing in a to-go container, and handing to a customer.
- Lack of test strips for quaternary sanitizer used in the 3-bowl sink.
- Grease and food build-up on, under, and around the cook equipment.
- Grease and food build-up throughout the kitchen.
- Grease caked on the side of cooking equipment.
- Leaking faucet from all three handwashing sinks in the kitchen.
- Lack of soap for the handwashing sink behind the cook line
- Evidence of food preparation in the handwashing sink to the right of the food preparation sinks.
- Fruit fly killing solution in storage above cooking collared greens on the stove.
- Certified food safety manager certification expired on 02/19/20.
- Ready-to-eat ribs on pans stacked directly on top of each other.
- To-go, hinged containers stored directly on floor in original cardboard box.
- Soiled cardboard used to line the floor in front of the fryers and cleaning equipment.
- Sign prohibits customer use of restrooms.
- Inoperable urinal in the men’s restroom.
- Dumpster lids open during inspection. Trash littering the surrounding areas
- Floors soiled throughout the kitchen.
- Baffle filters over the fryers in need of cleaning.
- Back utility room filled with miscellaneous items.
- Inoperable hot-holding and cold-holding equipment throughout the kitchen.
- Valid health permit not posted.
- Health Permit Expired
- The operator observed not wearing a mask at the start of the inspection. Corrected.
- No physical barrier between customers and the operator.
- No indication of social distancing in the facility.
- No indication of restricted seating or occupancy in the facility.
- COVID-19 flyer not posted. Corrected during inspection.
