20 violations for Bamboo in East Norriton; Date marking lacking on food containers, Rust observed on walls of small chest freezer, Cutting boards with deep grooves and heavy discoloration

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 1/20/21. As a result of that inspection, and due to the severity of the specific violations Bamboo was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 20 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Handwashing signs lacking at hand sinks in men’s and women’s restrooms.

  • Cutting boards with deep grooves and heavy discoloration.

  • Chlorine sanitizer concentration of ware washing machine observed at less than 50ppm. Facility must cease use of ware washing machine for sanitizing and must sanitize wares in the three basin sink. Facility may not use unit until serviced, supplying final rinse of 50-100ppm chlorine. Failure to comply could lead to legal action. Email repair invoice.

  • Date marking lacking on food containers in refrigeration. All foods that are TCS, RTE, and held longer than 24hrs must be marked with a discard date not to exceed 7days or the manufacturers sell by date, which ever is shorter. Commercially processed foods must also include an open date.

  • Chemical spray bottles in kitchen lacking labels.

  • Facility thawing frozen food at room temperature.

  • Lacking visible accurate thermometer in prep unit at cooks line.

  • Soiled wares observed in rinse compartment of 3-bay ware washing sink. Inspector explained proper set-up and use of sinks. Rinse compartment must be cleaned and sanitized prior to use.

  • Dry goods items observed stored in open original bags in storage room.

  • Large bags of dried chili peppers stored on floor in dining room.

  • Bag of onions observed stored on dish machine drain board.

  • Bowl/cup used as scoops stored in dry goods/food items containers.

  • Boxes of single service food contact items stored on floor in dining room.

  • Single service containers at cooks line stored with food contact surface exposed.

  • Rust observed on walls of small chest freezer in kitchen.

  • Raw wood shelf used to store condiments/seasonings at cooks line. All surfaces in the kitchen must be smooth, continuous, non-porous and easily cleanable.

  • Fan guard in 1-door cooler in kitchen unclean.

  • Interior of prep unit at cooks line unclean.

  • Racks in walk-in cooler unclean.

  • Grease build-up on hood filters along cooks line. Inspector contacted East Norriton Twp. Fire Marshal following inspection.
