22 inspection violations for Ma Dang Korean Cuisine in North Wales; utensil (paddle) in stagnant water at rice cooker in front prep area of kitchen

The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on 3/3/2020. As a result of that inspection, and due to the severity of the specific violations Madang Korean Cuisinewas cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 22 violations were found and include one or more violations determined to be food borne illness risk factors.

The inspector made the following comments in support of the violations found during the inspection:

  • Equipment stored inside of hand sink at three basin sink.

  • Facility lacking soap at hand sink adjacent to three basin sink.

  • Facility lacking means of drying hands at three basin sink at three basin sink.

  • Covers lacking for food storage vessels at walk in cooler and food prep cooler bottoms.

  • Facility observed storing cutting board on floor adjacent to food prep cooler #2. COS – facility instructed to wash/rinse/sanitize during time of inspection.

  • Facility observed storing open containers of mayonnaise at room temperature – facility stated containers stored in above state for multiple days. packaging states refrigerator once package is opened. COS – facility voluntarily discarded two 1 gallon containers of mayonnaise.

  • Facility observed lacking adequate date markings of prepared TCS food items to be stored in facility for longer than 24hrs. Adequate date markings of prepared TCS food items to be stored in facility for longer than 24hrs consists of a discard date not to exceed 7 days from, and including, date of preparation. EHS reviewed date marking procedures and requirements during time of inspection.

  • Built in ambient thermometer at walk-in freezer no longer functioning. Facility instructed to repair or replace with internal ambient thermometer.

  • Facility lacking common name labeling for bulk food storage containers in back storage area.

  • Facility storing mop bucket in contact with dough mixer at back prep area. COS – facility relocated bucket and wiped down effected areas.

  • Facility storing food items in colanders throughout facility. COS – facility relocated items to approved storage vessels.

  • Facility observed nesting food storage containers inside of other food storage containers at walk in cooler and food prep cooler top.

  • Scoop lacking handle stored inside of bulk food storage container at back dry goods storage area. COS – facility voluntarily removed.

  • Facility storing utensil (paddle) in stagnant water at rice cooker in front prep area of kitchen.

  • Facility re-using single use plastic storage containers for storage of prepared food items.

  • Facility storing single use utensils and storage containers inside of open containers on floor of side hallway. Facility instructed that items should be stored a minimum of 15″ in an area which limits potential for contamination.

  • Open original cans of tomato purée observed inside of walk in cooler as well as bottom of food prep cooler #2. COS – facility relocated to an approved storage vessel.

  • Unsealed wood observed along top of food prep cooler #2 as well as on table used to store sheet roller for dough at front prep area. Facility instructed to remove and replace with approved materials or refinish surfaces to a sealed state approved for use with food grade materials.

  • Facility has installed flour tumbler machine in rear area in place of ice machine. Leg of machine do not provide adequate cleaner for proper cleaning under machine. machine must be sealed to floor or elevated on legs to provide a 6 inch clearance from floor to equipment. Facility granted until 3/19/20 during change of ownership inspection.

  • Heavy grease accumulation observed along hood vents of kitchen. EHS contact Montgomery Township Fire Services during time of inspection.

  • Facility gaskets of food prep coolers observed unclean.

  • Food prep sinks drain line lacking adequate air gap for drain line – minimum 1″. Facility given until 3/19/20 from change of ownership. NOTE: during time of inspection back prep sink observed with signs of recent use. Facility instructed both prep sinks must be above stated requirements.
