25 violations for Chambersburg Family Diner; Can opener creating metal slivers, interior of ice bin has food residue, buildup, or mold

The Borough of Chambersburg conducted an unannounced retail food inspection on January 29, 2020. As a result of that inspection, and due to the severity of the specific violations the Chambersburg Family Diner was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 25 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Food Employee did not follow proper hand washing procedure.
  • Food in all areas, (shrimp, bacon, fish, biscuits), stored open with no covering.
  • Food that is held more than 24 hours is not being marked with date it was opened.
  • Observed deeply scored cutting boards not resurfaced or discarded as required. Inspector requested that items are replaced within 11 days.
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Inspector requested that the fryer be replaced within 11 days.
  • Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use.
  • Exterior door located in the rear area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals. Inspector is requesting the door to be replaced within 11 days.
  • Wiping cloths not stored in sanitizer solution.
  • Observed food stored under dirty ventilation ducts and subject to potential contamination.
  • Food facility contact equipment surfaces/non-food contact observed with grease, food debris on the shelves in the walk-in, stove shelf, oven, and microwave. Shelving is rusted in the walk-in and needs replaced.
  • Pans and dishes not being inverted (in order to air dry after washing)
  • Hand washing sign not available. Corrected on the spot.
  • Thermometers for ensuring proper temperatures of food are not available or readily accessible. Corrected on the spot.
  • Observed loose gaskets or cracked door seals.
  • Buffalo chopper cover is cracked and needs replaced.
  • Hand washing sink must be maintained clear at all times.
  • An open employee’s beverage container was observed in prep area and dish room area.
  • Food dispensing utensils in garlic butter and chili observed stored in the food and not with handle above the top of the food and the container.
  • Observed several food items stored directly the floor, rather than 6 inches off of the floor as required.
  • Food preparation in area under dirty ventilation ducts, and subject to potential contamination.
  • Observed food requiring date marking or was beyond the date marking.
  • Can opener in the prep area is creating metal slivers and is not clean.
  • Food facility does not have available sanitizer test strips to determine appropriate sanitizer concentration.
  • Ice machine interior bin, a food contact surface, was observed to have food residue, buildup, or mold and was not clean to sight and touch.
  • Food facility has Serve Safe Manager’s Certificate, but it is expired or is not longer valid. Facility is required to obtain a valid Certificate within 90 days.
  • he ceiling in the waitress area has a hole and drywall is broken.
