26 violations at Jade Garden in Dresher; Hand sink knobs with excessive residue build-up, retail food items in non-food grade storage containers – grocery bags

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 1/26/21. As a result of that inspection, and due to the severity of the specific violations Jade Garden was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 26 violations were found.

 

The inspector made the following comments in support of the violations found during the inspection:

  • Hand sink knobs observed with excessive residue build up. facility cleaned during time of inspection

  • Facility lacking current parasite destruction letter. Facility provided current parasite destruction sent over by supplier letter during time of inspection.

  • Cutting edge of can opener observed unclean at back prep table.

  • Facility lacking approved date markings for TCS food items prepared on site and not used within 24hrs. EHS instructed the facility that TCS food items prepared on site or has been removed from packaging that are not meant for use within 24hrs should include a discard not to exceed seven days after the preparation of the items or the date their packaging has been pierced.

  • Facility lacking time log for cut vegetables stored outside of refrigeration along cooks line. Facility stated time log book was used and provided to EHS – last entry 9/2020. facility stated items left refrigeration within 2.5 hrs of inspection and would be discarded in accordance with 4 hr discard time.

  • Facility pH log book incomplete – log book lacking recordings for prior month. Facility restarted complete and approved log book during time of inspection.

  • Sushi rice stored outside of temperature control observed with a pH above an approved level. pH – 4.3. Facility voluntarily discarded and remade rice. facility discarded contents of one rice steamer.

  • pH meter was not functioning properly. Facility replaced batteries in unit and facility was able to display knowledge of proper calibration.

  • Facility cooling prepared ducks at walk in cooler stacked together inside of plastic bin at walk in – items observed at 52F. Facility stated prep took place within approximately 1 hour of inspection. Facility instructed to relocate items to sheet pan and relocate to walk freezer for rapid chilling before relocation to walk in cooler.

  • Facility lacking common name labeling for multiple bulk food storage containers in dry storage area as well as shelving. facility labeled items during time of inspection.

  • Facility storing retail food items in non-food grade storage containers – grocery bags at walk in freezer / cooler. facility relocated items to approved storage vessels.

  • Facility storing food items along floor of walk in cooler / freezer and dry storage areas. Facility relocated items to approved storage areas during time of inspection.

  • Facility observed nesting containers of broccoli at walk in cooler. Facility relocated and covered items.

  • Facility observed storing food items at colanders at walk in cooler. Facility relocated items to secure and approved storage containers.

  • Wet wiping clothes stored outside of sanitizer buckets at front sushi prep area.

  • Facility observed storing knives hanging between prep table and food prep cooler along cooks line. Facility voluntarily relocated.

  • Observed hanging tongs from handles on cooks line. Facility voluntarily relocated items.

  • Facility observed storing multiple food items in open original cans at food prep and walk in coolers. Facility relocated items during time of inspection.

  • Observed with raw wood shelving at walk in cooler – finish has been worn off. Facility instructed to refinish surfaces to a smooth, non-porous, easily cleaned and durable surface.

  • Deep grooves and heavy discoloration on cutting boards at food prep cooler on cooks line. Facility instructed to replace or resurface.

  • 4Shelving throughout walk in cooler observed unclean.

  • Interior walls of walk in cooler observed unclean.

  • (2 times repeat violation) Food residue build-up observed on refrigeration unit handles. Facility wiped down during time of inspection.

  • Black residue observed along door gaskets at walk in cooler and walk in freezer.

  • Open boxes of single use containers observed stored on floor of exterior storage unit. Facility relocated items during time of inspection.

  • Heavy grease accumulation observed on hood vents as well as dripping out of hood vent system. EHS contact fire marshal during time of inspection and received confirmation of follow up by Upper Dublin Twp. Facility stated intent to have hood vent system cleaned by approved contractor within 24hrs.
