27 violations; Panache Wood Fire Grill in Blue Bell fouls 8th Health Department inspection since October 2017 following complaint

The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on 6/18/2020 following receipt of a complaint. As a result of that inspection, and due to the severity of the specific violations the Panache Wood Fire Grill in Blue Bell was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 27 violations were found and include one or more violations determined to be food borne illness risk factors.

According to reporting by the Philadelphia Inquirer the Panache Wood Fire Grill has failed to be “In Compliance” at eight inspections, passing only three of eleven inspections. Each of the “In Compliance” inspections were follow-up or reinspections after an, “Out of Compliance” inspection:

  • Oct 18, 2017- Inspection Type: Routine-Complaint- 15 violations with 5 food borne illness risk factor violations cited.
  • Dec 14, 2017- Inspection Type: Follow-up- passed with 1 lower level “Lack of Good Retail Practices” violation.
  • Jun 29, 2018- Inspection Type: Routine: 26 violations with 10 food borne illness risk factor violations cited.
  • Jul 26, 2018- Inspection Type: Re-inspection- 6 violations with 2 food borne illness risk factor violations cited.
  • Nov 9, 2018- Inspection Type: Routine-Complaint- 32 violations with 8 food borne illness risk factor violations cited.
  • Nov 26, 2018- Inspection Type: Re-inspection- 13 violations with 2 food borne illness risk factor violations cited.
  • Nov 28, 2018-Inspection Type: Follow-up-  passed with 1 lower level “Lack of Good Retail Practices” violation.
  • Dec 17, 2018 Inspection Type: Re-inspection – passed with ZERO violations
  • May 15, 2019 Inspection Type: Routine- 17 violations with 4 food borne illness risk factor violations cited.
  • Nov 18, 2019 Inspection Type: Routine- 19 violations with 6 food borne illness risk factor violations cited.

The inspector made the following comments in support of the violations found during the inspection:

  • Facility lacking a current MCOPH CFSM. Facility has 10 business days to submit reciprocity application or submit proof of registration in an approved food safety course.
  • Facility lacking soap at hand sink at bar
  • Lacking single service towels for hand sinks.
  • Hand washing sign lacking at hand sink at outside bar
  • Improper date marking for shellstock tags after product has been consumed/sold.
  • Food uncovered in reach-in freezer at end of cooks line
  • Raw shelled eggs stored over ready to eat food in walk-in cooler
  • Facility operating dish machine without sanitizer. Facility replaced bucket
  • Can opener blade unclean
  • Food items observed with an internal temperature greater than 41F at Bain Marie at cooks line. Facility voluntarily discarded all food items. (see note below)
  • Proper date marking lacking on prepared food items in secondary containers and/or packaging.
  • Improper usage of asterisk next to consumer advisory and correlating items on menus
  • Bain Marie at cooks line observed with an internal temperature greater than 41F. Facility cannot use unit until repaired and operating at 41F or below. Facility must provide MCOPH with proof of repair
  • Common name label lacking on secondary dry goods containers in dry storage room
  • Common name label lacking on squeeze bottles at cooks line.
  • Employee beverages and personal items stored on clean wares storage rack.
  • Employee beverage observed inside of customer ice machine
  • Containers/boxes of food stored on floor in walk-in freezer
  • Food handler lacking hair/beard restraint
  • Pizza cutter stored in stagnant water near pizza oven
  • (2 times repeat violation) Tongs stored on oven door handle along cooks line.
  • Food stored in opened and original can in walk-in cooler
  • Fan guard in walk-in cooler is unclean
  • Leak at plumbing of hand sink at end of cooks line
  • Drain for food prep sink at bakery area is slow draining
  • Damaged floor tile at bakery area near food prep sink floor drain
  • Mop not stored hanging or inverted to dry.

*The temperature danger zone is food temperatures between 41 and 135 degrees Fahrenheit and the most rapid bacteria growth occurs between 70 and 125 degrees Fahrenheit. The longer food sits in this temperature range, the greater the risk that bacteria will begin to grow on food.
