Allentown’s Sunrise Diner slapped with 11 violations; found, “Out of Compliance” by city inspectors, dishwasher not sanitizing

The City of Allentown conducted an unannounced retail food inspection on 5/28/2020. As a result of that inspection, and due to the severity of the specific violations the Sunrise Diner was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 11 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The dishwasher was not dispensing sanitizer properly. The machine can be used to wash dishes however the dishes must be sanitized manually after the wash cycle until the unit is working properly.
  • Ice was observed in the handwashing sink indicating uses other than handwashing. Handwashing sinks are only to be used for handwashing.
  • The floor behind the griddle showed an accumulation of food debris. Clean the floor under the griddle.
  • Food in the reach in refrigerator next to the cooking line was held at 50 degrees F instead of 41 Degrees F or below. The food had been placed there within 4 hours and was moved to a working unit.
  • Scrapple in the Bain Marie was 62 degrees F. The scrapple and other food items held in the unit overnight were discarded. The fresh cut vegetables and foods placed in the bain marie two hours prior were moved to the walk-in cooler.
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Wash, rinse and sanitize dishes in the three bay sink or use the dishwasher and manually sanitize in the three-bay sink after each cycle.
  • Corn meal was stored next to chemicals in the dry storage area. The Corn meal was moved to a different shelf. Ensure all food is separate from chemicals when in storage.
  • Baked goods in the walk in freezer in the basement were stored without covering. Ensure all food in storage is covered.
  • The refrigerator next to the grill and the Bain Marie are not capable of holding food below 41 degrees F. Repair units and do not use the units until they can maintain food at or below 41 degrees F.
  • The Deli slicer showed a buildup of old food residue. Disassemble, wash, rinse and sanitize the deli slicer.
  • The can opener showed a buildup of old food residue around the blade. Disassemble, wash, rinse and sanitize the can opener.
  • Non-food contact surfaces such as the side of the griddle showed an accumulation of food debris. Clean the side of the griddle.
  • Several fans in the kitchen showed a heavy accumulation of dirt and dust. Clean the fans.
