The City of Allentown conducted an unannounced retail food inspection on 5/26/2020. As a result of that inspection, and due to the severity of the specific violations Big Woody’s Sports Bar and Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.

Records show Big Woody’s Sports Bar and Restaurant has failed to be, “In Compliance” for the three of the last four annual inspections by city inspectors:

The inspector made the following comments in support of the violations found during the inspection:

  • Raw chicken was stored above ready to eat food in the walk in cooler. Raw proteins such as chicken must be stored below ready to eat foods. Item was relocated.
  • The fryers in the kitchen, the floor beneath the fryers and cook line exhibited an excess of old grease build up. Clean these areas.
  • Cups were being used as dispensing utensils in the dry ingredient bins. Scoops with a handle that extends above the level of the product should be used as a dispensing utensil.
  • The bain marie at the pizza making station was not maintaining temperatures below 41F. Sauce and cheese with in the unit exhibited the following temperatures of 62F and 55F, respectively. Product was discarded. Service these units. Do not use these units until they can maintain temperatures below 41F.
  • The Quaternary Ammonia sanitizer was not registering a reading when tested with a sanitizer test strip because the sanitizer was empty. Facility had alternative sanitizing methods to use in place of the quaternary sanitizer. Reorder more sanitizer for the 3 bay sink.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Acquire this material.
  • The deli slicer exhibited old food residue on the blade and the shield. The ice machine scoop was being stored on top of soiled linens. Clean the deli slicer, store the ice scoop in clean container when not in use.
