The City of Greensburg conducted an unannounced retail food inspection on November 16, 2019. As a result of that inspection, and due to the severity of the specific violations the Pizza Siena in Greensburg, PA was cited as being, “Out of Compliance” with Pennsylvania food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Will use dish machine for washing and sanitize all items in 3-part sink.
  • Black filth observed on the interior of the ice machine. DO NOT USE. Please empty ice machine COMPLETELY!! Wash, Rinse and Sanitize all parts and allow to air dry before refilling. This machine WAS NOT cleaned during the time of this inspection and bagged ice will be utilized until approval is obtained.
  • Mozzarella cheese in tub at pizza making area was 46F instead of 41F or lower. Cheese was placed entirely in cold well to help maintain temperatures. Corrected.
  • Food facility is using quaternary sanitizer at an extremely high concentration of >400ppm in sanitizer buckets at bar & service station. Buckets were too high a concentration for food contact sanitizing. Buckets were diluted.
  • Two uncovered employee drinks in food prep area. Must have lid and straw on all drinks and store below food prep surfaces. Corrected.
  • Loose rubber door gaskets observed on several prep coolers. New ones on order.
  • Food facility is reusing dressing & oil containers to store wing sauces & Italian dressing which are intended to be a single-service or single-use article.
  • Floors in fryer area and right side of fryer has grease build up.
  • Several spray bottles on shelf above hand sink are not labeled with chemical name. Labeled on site.
