The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 4/24/2020. As a result of that inspection, and due to the severity of the specific violations the Bob Evan’s Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 2 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The hot water used for sanitizing in the mechanical ware washing machine did not reach 180°F (or 165°F for stationary rack). Machine thermometer only reached 169°F, temp measured with maximum registering thermometer was 158°F. Facility is to sanitize all equipment in sink with available Quaternary sanitizer pills at a 200-400 ppm concentration. Discussed need for a way to verify temp, such as a maximum registering thermometer or temp test strips
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. The racks in the walk in cooler have an accumulation of mold like residue. There is dust and cobwebs in the hood. Floors under tables and cabinets need swept. The dish machine has a heavy build up of slimy residue on the top of unit, on the interior and outside of the doors, on the bottom of the unit and the floor beneath. The salad prep unit and prep unit at the grill have an accumulation of food spillage. The entire grill area is in need of cleaning, there is food spillage and grease build up in the plate storage area under the grill, the drawers under the grill, on shelves above the grill and sides of the grill.
