The Chester County Health Department conducted an unannounced retail food inspection on 2/7/2020. As a result of that inspection, and due to the severity of the specific violations the Brickside Grille was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Several cutting boards were observed to be heavily fissured and discolored. Replace or resurface all fissured and discolored cutting boards within 3 weeks. Equipment is to be maintained in good repair and an easily cleanable condition. No wood cutting boards for TCS foods.
  • Clean the following: * Bar flooring under equipment; bottle caps and soiled debris * Dry storage room flooring under plastic bins; food debris Thoroughly clean within 24 hours.
  • The following structure needs repaired: * Small walk-in cooler; the metal floor panel around the top of the ramp is broken and exposing the wood sub base below. Install a cleanable patch or replace the flooring within 30 days. Flooring material must be approved by the Department. * Beer Walk-in cooler. Cove base is loose and/or missing inside and outside the door. Replace all broken or missing cove base. Correct within 30 days.
  • No Chester County Certified Food Manager.
  • The following refrigeration units were observed to have elevated air and food temperatures (degrees F): * Continental Bain Mare (saute area), 56 degrees in upper compartment products and air temperature in base 56. All items held overnight or longer than 2 hours were discarded on site. * Bain maire across from deep fryers had a measured air temperature of 44 degrees F. Thermostat adjusted on site. Maintain all TCS foods at 41 degrees F and below. Have the unit’s serviced and repaired. Temperature’s shall be monitored and logged daily. Maintained a daily AM/PM Temperature log for all coolers and freezers.
  • Observed dishwasher sanitizer containers being re-used for soup storage. Do not use chemical containers for storage of food products. Provide multi-use food grade containers. Correct immediately.
  • Clean the following: * Bar. Beverage Air cooler has condensate on the floor panel. Clean and repair the unit. Correct within 48 hours. * Beer Walk-in. Mold growth on fan guards and ceiling panel * Clean the top of the dishwasher; soiled debris Clean all within 24 hours. Maintain all equipment clean to the sight and touch.
