Chambersburg’s China Wok slapped with 28 inspection violations; “Employee was observed handling food without gloves,” “food facility is extremely dirty”

The Borough of Chambersburg conducted an unannounced retail food inspection on 2/18/2020. As a result of that inspection, and due to the severity of the specific violations the China Wok was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 28 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • No kit or procedures were observed for vomiting or diarrheal events.
  • Observed wet wiping cloths not being stored in sanitizer solution.
  • Trash receptacles used inside the food facility extremely soiled and dirty.
  • Food Employee observed donning single use gloves without a prior hand wash.
  • An open employee’s beverage container was observed in the food preparation area.
  • Observed food preparation area under dirty ventilation ducts, and subject to potential contamination.
  • Observed food stored under dirty ventilation ducts in the walk-in.
  • Thermometers for ensuring proper temperatures of food are not available or readily accessible.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration
  • Loose or broken gaskets and seals observed in the prep station area.
  • Cutting boards and knives are not being cleaned between raw foods and ready-to-eat foods.
  • The paper towel dispenser was empty at the hand washing sink in the bathroom.
  • Broken floor tiles were observed in several locations and need replaced.
  • Inspector noted that the food facility is extremely dirty and in need of cleaning.
  • Common grinder used to grind beef or pork was observed not clean or sanitized.
  • Food in many locations was observed open with no covering.
  • Food dispensing utensil was observed stored in the food and not with handle above the top of the food and the container.
  • Observed deeply scored cutting boards not resurfaced or discarded as required.
  • Observed slicer, grinder, and microwave equipment, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces.
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.
  • Wet wiping cloths are not being laundered daily.
  • Observed pans and dishes not inverted and wet equipment stored without air drying.
  • Observed vent hood not adequately being cleaned as evidenced by grease collecting on fixtures.
  • Exterior door located in the rear area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.
  • Food employees observed not wearing proper hair restraints, such as nets, hats, or beard covers.
  • Employee was observed handling food without gloves.
  • In several locations, food was observed not date marked or labeled.
  • The sink does not have an adequate air gap of at least 1 inch, between the water supply and flood rim of the sink.
  • It was observed that the outside trash unit does not have a tight-fitting lid.
  • Employee personal items were observed in not stored in dressing rooms or identified storage area as required.
