The Pennsylvania Department of Agriculture¬† conducted an unannounced retail food inspection on 2/10/2020. As a result of that inspection, and due to the severity of the specific violations the Chili’s Grill and Bar was cited as being, “Out of Compliance” with Pennsylvania food safety regulations. During this inspection a total of 12 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Commercially processed refrigerated, ready to eat sliced cheese, located in the walk in cooler, and held more than 24 hours, is not being marked with the date it was opened.
  • Heavy amount of dried food, paper and ice accumulation on floor inside walk in freezer. 3RD REPEAT VIOLATION (1/16/18 & 1/14/19)
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Food containers stored in dry storage shelf were observed with heavily encrusted food residue and was not clean to sight and touch.
  • Cast iron platters were observed with rust & heavily encrusted food residue and was not clean to sight and touch.
  • The food facility does not have the original certificate for the certified food employee posted in public view.
  • Refuse is not being stored in receptacles or waste handling units that are inaccessible to insects and rodents. REPEAT VIOLATION (1/14/19)
  • Working containers throughout facility taken from bulk supplies, were not marked with the common name of the chemical.
  • Ice paddle used to break up ice inside ice machine was observed with deep scoring and black residue on paddle.
  • Cutting boards on the main cook line were observed with staining & deep scoring.
  • Soda dispensing mechanism in server section were observed with a heavy accumulation of black filth.
  • Food employee observed storing clean food equipment while wet, and not allowing time for draining and/or air-drying.
  • Outdoor grease storage area for waste is located back dumpster area and is creating a potential insect or rodent hazard for the food facility. REPEAT VIOLATION (1/14/19)
  • Gallon containers of milk, a refrigerated, ready to eat, time temperature control for safety food in the walk in cooler area was beyond the 7-day use or sell by date and requires discarding.
  • Observed clean food equipment in prep area stored wet in a manner that does not allow for draining and/or air drying (wet nesting). 3RD REPEAT VIOLATION (1/16/18 & 1/14/19)
