The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 9/2/2020. As a result of that inspection, and due to the severity of the specific violations China Wok was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 15 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed wet wiping cloths not being stored in sanitizer solution.
  • In several locations, food was observed not date marked or labeled.
  • Observed visible evidence of roaches in and around the refrigerator area.
  • Observed deeply scored cutting boards not resurfaced or discarded as required.
  • Observed vent hood has not been adequately cleaned as evidenced by the build up of grease and grime.
  • Exterior door located in the rear area of the food facility was open and does not protect against the entry of insects, rodents, and other animals.
  • Raw chicken was stored above raw beef in the walk-in.
  • Observed the slicer that is used to slice meat was not clean or sanitized.
  • Observed food that was stored uncovered.
  • Observed knives being used in contact with meat without being properly cleaned and sanitized prior to use.
  • Chicken was held at 60°F, in the kitchen area, rather than 41°F or below as required.
  • The chlorine concentration in the sanitizing solution of the 3-bay ware wash sink was 0 ppm, rather than 50-100 ppm as required.
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed loose gaskets and broken seals on the Refrigerator door.
  • Wet wiping cloths are not being laundered daily.
  • The paper towel dispenser was empty at the hand washing sink in the kitchen.
