The Borough of Chambersburg conducted an unannounced retail food inspection on 2/25/2020. As a result of that inspection, and due to the severity of the specific violations Don Checko’s Mexican was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 17 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions.
  • The food facility was extremely dirty, and dusty and in need of cleaning under all the equipment, floors, and shelves in refrigerator.
  • Observed wet wiping cloths not being stored in sanitizer solution.
  • Observed food items that were undated and not labeled.
  • Observed cooking equipment / pans, in the production area, with encrusted grease and soil accumulation.
  • No sign or poster posted at the hand wash sink in the bathroom area to remind food employees to wash their hands.
  • The light intensity in the food preparation area is not at least 50 foot candles
  • Observed in-use knives stored between table edges or between tables, an area not easily cleanable & sanitized.
  • Women’s toilet room is not provided with a covered waste receptacle for sanitary napkins.
  • Light cover was missing in the bathroom.
  • The hand wash sink in the kitchen does not have single use towels, continuous towels, or air drying device.
  • Observed both ceiling tiles missing and floor tiles missing in the prep area, and need replaced.
  • Employee personal items were observed in prep area, and not stored in dressing rooms or identified storage area as required.
  • Observed chicken in the stand up cooler area stored open with no covering.
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil.
  • Observed broken or cracked door seals on the 2 door refrigerator/freezer.
  • The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 50-100 ppm as required.
