The Bucks County Department of Health conducted an unannounced retail food inspection on 3/3/2020. As a result of that inspection, and due to the severity of the specific violations the El Barrio Cantina & Tequila Bar was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • There is no food safety manager certified by this Department (CFSM) on duty as required. A CFSM must be on duty at all times the facility is open and/or food is being prepared. A completed application(SA-71)for CFSM, or proof of enrollment in an approved safety class must be submitted to the Department. Repeat Violation.
  • Some hand sinks are missing paper towels. Ensure all hand sinks are supplied with soap and paper towels. Owner provided paper towels. Corrected On-Site. Repeat Violation
  • Raw Time/Temperature Control for Safety (TCS) products are being stored directly over ready to eat foods in the 2 door glass refrigerator. Always store raw TCS products under ready to eat foods. Owner corrected immediately. Corrected On-Site. New Violation.
  • The food contact surfaces of equipment and utensils are not being properly cleaned and sanitized. All wares and food contact surfaces of equipment and utensils must be cleaned and sanitized after each use or at required time intervals. Ensure the vegetable cutter is cleaned. Owner took the cutter to the dishwasher. Corrected On-Site. New Violation.
  • Rice and cheese sauce in the hot holding unit are not at safe temperature. Hot food must be held at 135F or above. These were reheated to be placed in the hot holding unit. Corrected On-Site. New Violation.
  • Some ready to eat time/temperature control for safety (TCS) foods are not being date marked as required such as pico de gallo, guacamole and etc. Refrigerated, ready-to-eat, TCS food prepared and held in a food facility for more than 24 hours shall be clearly marked to be sold or discarded within 7 days or the manufacturers use by date whichever comes first.   • Improper thawing of fish was observed in the refrigerator. The fish was vaccum sealed and thawing in the vaccum packaging. This is not approved. Remove fish from packaging and thaw in the refrigerator. Employee began correcting. Corrected On-Site. New Violation.
  • In use utensils are being stored in room temperature water. In use utensils must be stored in water that is maintained at 135F or stored on a clean food contact surface and cleaned at required time intervals. The utensils were removed to be cleaned. Corrected On-Site. Repeat Violation.
