The Chester County Health Department conducted an unannounced retail food inspection on 2/20/2020. As a result of that inspection, and due to the severity of the specific violations the Elegance Bakery and Cafe was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 13 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The light intensity in the food facility is not at least 50 foot candles in following areas; 1-above the front kitchen door entrance 2-hall way between servery line and kitchen – replace light bulb.
  • Food Employee was observed washing their hands at the 3 bay sink rather than the designated hand wash sink.
  • A food employee was observed assembling an omelette sandwich with bare hands in the rear room.
  • The following equipment not observed in good repair; 1-Excessive ice build up observed on condensation line in walk in freezer. Eliminate excess ice build up
  • Provide soap and paper towel dispenser in rear hand wash sink at stove top. This is required since this is now a food assembly location for egg sandwiches.
  • Prepackaged soups in grab n go is not labeled properly with the name of product, ingredient statement, net weight, distributed by statement and/or nutritional facts.
  • Dough mixer observed soiled and not cleaned after use. Lower level dough mixer shall be clean to site and touch after the days use, equipment shall not remained soiled throughout the day.
  • Ingredient bins located in lower level area stored open with no covering. Provide lidded covers for the bulk ingredient bins.
  • Used egg shells intermingled with fresh eggs in bakery egg box. It shall be noted all eggs used for baking shall be stored in room temperature water for 15- 60 minutes prior to bake. Storing eggs at room temperature is prohibited.
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of stain and debris; 1-Deep clean floor located under bain maire 2-Ingredient bulk bins, sides, and edges 3-Organize soda box storage room 4-Organize hot water heater room
  • The following observed chipped / cracked / roughened / and is not a smooth, easily cleanable surface. Repair accordingly; 1-broken tile at window sill, rear cook line stove 2-Pantry door 3-Wall and floor coving in lower level soda storage room under water filters 4-Wall above lower level food prep table – eliminate card board like area on wall.
  • Lights are not shielded or shatterproof in the following area; 1-Lower level soda box room 2-Lower level above Tru two-door refrigerator.
  • Correct the following outer openings; 1- Window at stair landing, Zia to seal window with board or screen 2-Back door provide additional weather strip around door edge so when door is locked, no light air gaps can be seen.
