The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on December 17, 2019. As a result of that inspection, and due to the severity of the specific violations the Wimberly Pizzeria and Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 34 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Employee beverage containers stored on food prep surfaces, in refrigeration units, and on storage shelving throughout facility.
  • Employee observed eating while wearing gloves and preparing foods on cook’s line.
  • Plates stored inside of hand sink basin by 3 compartment sink.
  • No soap at hand sink by 3 compartment sink.
  • Bowl observed in kitchen area hand washing sink basin.
  • Raw beef stored above seafood in 2 door tall refrigerator.
  • Interior walls of ice machine observed with black mold-like growth.
  • Facility found not setting up 3 compartment sink properly. Wash basin was empty and middle rinse basin was filled with soap. Facility was instructed on proper wash, rinse, sanitize, and air dry procedures during inspection.
  • Chlorine sanitizer in 3 compartment sink tested below required concentration of 50-100ppm. Facility remixed solution to 50ppm during inspection.
  • Chlorine sanitizer bucket tested above 200pm concentration. Facility remixed solution to 50ppm during inspection.
  • Foods in pizza prep refrigerator recorded with internal temperatures of 53F-54F. Facility voluntarily discarded pepperoni, sausage, and pizza sauce during inspection.
  • Prepared and opened TCS foods held in facility longer than 24 hours under refrigeration lacking discard date marking not to exceed 7 days from the prep/open date. Facility was emailed date marking regulations during inspection.
  • Spray bottles filled with chemicals in facility found without labeling.
  • Deodorant stick observed stored in back prep area.
  • Pizza prep refrigerator recorded with ambient temperature of 51F. Facility must immediately stop using the unit. Facility may not use the unit until serviced by licensed professional, AND unit is operating at 41F or below, AND written permission is granted by MCOPH. Fax service report to 215-784-5524 or to the email provided. Failure to comply or await permission before using unit may lead to legal action.
  • Facility observed thawing reduced oxygen-packaged tilapia filets in 2 door reach-in refrigerator without having removed filets from vacuum sealed packaging. Filets were still frozen to touch. Facility moved fish back to freezer.
  • Facility lacking a probe thermometer to take internal food temperatures.
  • Ambient thermometer lacking in 2 door tall refrigerator.
  • Bottle of soda stored inside of ice machine.
  • A hand washing sign was posted at facility food prep sink. Food prep sink is designated for food preparation only.
  • Food handler lacking hair/beard restraint.
  • Soiled wet wiping cloths are not stored in sanitizer solution between use.
  • Plastic cup without a handle stored in sauce inside of grill prep refrigerator.
  • 3 compartment sink, mop sink, and prep sink are not sealed to the wall. Facility is granted 6 months from change of ownership (12/24/19) to seal all sinks to wall. A follow-up will be conducted during facility re-inspection to verify sealing of sinks. Failure to comply may result in further legal action.
  • Raw wood observed at front counter area directly adjacent to fountain soda dispenser. Finish and seal with a minimum of semi-gloss paint. Facility is granted 6 months from change of ownership (12/24/19) to seal raw wood. A follow-up will be conducted during facility re-inspection to verify sealing of raw wood. Failure to comply may result in further legal action.
  • Interior of chest freezers observed with ice accumulation on walls.
  • Right-hand door gasket at pizza prep refrigerator observed torn and melted with food residue accumulation.
  • Facility lacking chlorine test strips.
  • No cold water supplied to facility mop sink at beginning of inspection. Facility turned cold water supply back on during inspection.
  • Pipe under hand wash sink found to be detached from sink basin. Facility reattached during inspection.
  • No covered trash receptacle provided in restroom.
  • Excessive grease-like accumulation observed beneath cook’s line equipment.
  • Heavy grease build-up observed dripping down from facility grease hood system and ANSUL system fire suppression lines. The Lansdale Fire Marshal was contacted during inspection due to excessive grease accumulation.
  • Heavy water accumulation observed on floor of rear prep area. Water from rain outside observed leaking into facility through wall/floor. Facility must repair areas of leaks and clean up all standing water.
