Fairless Hills Dunkin’ Donuts bumbles inspection with food borne illness risk factor, “Interior baffle within the ice machine contains a mold-like substance”

The Bucks County Department of Health conducted an unannounced retail food inspection on 3/9/2020. As a result of that inspection, and due to the severity of the specific violations the Dunkin’ Donuts in Fairless Hills was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 5 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Sanitizer solution in buckets at front counter were measured at 0 ppm quaternary ammonium compounds concentration. Chlorine was also measured at <10 ppm. Manager emptied and refilled sanitizer buckets with Quaternary sanitizing solution.
  • Interior baffle within the ice machine contains a mold-like substance. Machine must be emptied of ice and interior surfaces cleaned and sanitized. Baffle was cleaned and sanitized during inspection.
  • Knives were found stored behind wall molding (at the 3-compartment sink) and behind wall pipes (at mixer area). Knives must be stored in a manner which prevents contamination. Knives were removed to ware washing area.  Corrected On-Site.  New Violation.  
  • Interior baffle within the ice machine contains a mold-like substance. Machine must be emptied of ice and interior surfaces cleaned and sanitized.  Repeat Violation. 
  • Sausage patties (46°F), sliced cheese (49°F) and cooked egg patties (45°F) in the prep unit were measured above range for cold-holding temperature. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. Unit lids had been frequently opened due to high order volume. Keep lids closed at all times when not in active use.  New Violation. To be Corrected By: 03/09/2020 **
  • Sections of bare-wood 2′ x 4’s are mounted to the wall across from the large floor mixer. This material is not easily cleanable nor non-absorbent.Coat or replace with appropriate material.  New Violation. To be Corrected By: 03/23/2020 
  • Fan covers in the walk-in cooler contain an accumulation of grime.
  • Drain (wall-mounted) near the mixer, contains a black, mold-like substance. Ran covers and drain were cleaned and sanitized during inspection.  Corrected On-Site.  Repeat Violation.   

*It’s unclear if this is a separate ice machine with the same violation as the first, or a repeat of the first violation. The Pennsylvania Chronicle repeats it as it appeared in the inspector’s report.

**The temperature danger zone is food temperatures between 41 and 135 degrees Fahrenheit and the most rapid bacteria growth occurs between 70 and 125 degrees Fahrenheit. The longer food sits in this temperature range, the greater the risk that bacteria will begin to grow on food.
