The City of Easton Bureau of Health conducted an unannounced retail food inspection on DATE. As a result of that inspection, and due to the severity of the specific violations  Sette Luna in Easton, Northhampton County was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of XX violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Food was held at 48°F, in the under-counter refrigerator in the basement prep unit, rather than 41°F or below as required. Discard the food that is stored in this refrigerator. Cold hold all food at temperatures of 41F or below at all times. *Food was discarded.*
  • The can opener blade and the soda guns at the bar, food contact surfaces, were observed to have food residue and they were not clean to sight and touch. Clean and sanitize the can opener and both soda guns.
  • Old food residue was observed in the hand washing sink, in the dish room, indicating uses other than hand washing. Clean and sanitize the hand sink and use the sink only for washing hands. *CORRECTED*
  • Flies were observed in the dish room and around the bar. Clean the floors, all floor drains and all sink drains in these areas. Contact your pest control company and inform them of the flies. Assist the company in removing the flies from this facility.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Food utensils were observed being stored in containers of water which is not maintained at 135°F. Correct this practice as you were instructed.
  • The under-counter refrigerator in the basement prep unit is not capable of maintaining food at temperatures of 41F or below as required. Repair or replace this refrigerator.
  • Observed no chemical sanitizer being used on a cutting after it was washed and rinsed. Correct this practice immediately. *CORRECTED*
  • The floors in the dish room, under the cooking equipment in the kitchen, behind the chest freezer near the stairs, the stairs to the basement, and around the glass washer at the bar, require cleaning. Clean all of the floors and both stairways.
  • The floor drain in the dish room is missing its cover and is filthy. Clean the floor drain and cover it.
  • The table under the char-broiler and the spice containers require cleaning. Clean the table and spice containers.
