The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 5/11/2020. As a result of that inspection, and due to the severity of the specific violations the Fuji Japanese Steakhouse was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Observed single-service, single-use articles stored in bar area directly on the floor, and not 6 inches above the floor.
- Noted there was no consumer advisory on the sushi page of the menu or other written means to warn consumers the health concerns of eating raw product.
- Noted a black residue build up on the ice deflection shield and ice bin on the ice machine in the food prep area. Ice machine to be emptied, cleaned and sanitized.
- Noted a large hole in the wall along the base board behind the water heater in the storage area. Noted ceiling tiles are missing on the ceiling over the walk in cooler. Noted a grease build up on the floor by the deep fryers in the food prep area.
- Noted facility is not keeping pH meter calibration records as required.
- Mechanical ware washing equipment had a white and black residue buildup observed inside.
- Noted facility is unable to produce freezing records from the supplier that the fish used for sushi was frozen to eliminate parasites.
