The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on 2/26/2020. As a result of that inspection, and due to the severity of the specific violations the Gertrude Hawk Chocolates was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found and include one or more violations determined to be food borne illness risk factors.
The inspector made the following comments in support of the violations found during the inspection:

Facility lacking posted signage stating “Inspection Reports are Available Upon Request.”

Hand sink at back storage area obstructed to retail product.

Ambient thermometers at combo domestic freezer as well as 1 door reach in cooler (front prep) damaged.

Dead fruit fly like insects observed along wall adjacent to three basin sink. COS – facility cleaned and sanitized effected areas.

Fruit fly like insect observed at wall adjacent to three basin sink system in ware washing area. facility instructed to clean and sanitize effected areas as well as contract pest control services immediately. Facility instructed to provide work order from professional pest control service to MCOPH within ten business days. EHS provided contract information during time of inspection.

Absorbent sponges observed throughout ware washing areas.

Facility using clear packing tape to create wall for shelving at domestic freezer.

Mop stored drying in bucket at mop sink.
