Observed heavy build-up of food residue, and a black mold-like substance located within pizza station/front counter bain marie.  Observed heavy ice-damming occurring at condenser fans of walk-in freezer; ice buildup potential to contaminate food.
  • Pizza dough, cut vegetables, and tomato sauces foods were held at 53 °F, in the pizza prep cold hold unit, rather than 41°F or below as required. All items voluntarily removed from cold hold unit and disposed of during inspection.
