The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 3/2/2020. As a result of that inspection, and due to the severity of the specific violations Subs-N-Stuff was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evident by the violations observed in this inspection report.
- Observed bottoms of food containers stored in direct contact with ready to eat foods located in Bain-Marie cooling unit closest to grill area.
- Old food residue on bottom surfaces of Bain-Marie cooling unit (deli) and storage racks of adjacent 2-door cooling unit.
- Table-top located below flat-top grill was observed to have presence of old grease and excessive soil accumulations.
- Observed old crusted food debris located on inside surfaces of crock pot used to heat cheese sauce (within another container)
- Old food litter/debris located on flooring below Bain-Marie cooling units and floor/corner junctions of main food preparation areas.
- Observed no chemical sanitizer being used on food contact surfaces of deli meat slicer (observed slicer being wiped with soiled cotton cloth). *Corrected*
- Observed old oxidized food debris located deep-fry baskets/handles.
- 2 working containers of cleaner/sanitizer stored directly above Bain-Marie cooling unit of main sandwich preparation area. *Corrected*
- Bag of onions stored directly next to a mop bucket: Handle of mop was observed to be in direct contact with bag of onions. *Corrected*
- Observed large white bag of sub rolls stored directly on ground inside walk-in cooling unit. *Corrected*
