Great Wall in Halifax inspection finds nail clippers stored a shelf above the refrigerated food preparation unit, jacket  stored on top of a bag of onion

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 1/26/21. As a result of that inspection, and due to the severity of the specific violations Great Wall was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Ceiling tiles missing or severely damaged by water at the rear of the facility, and need replaced.
  • A Potential pest harborage area inside the food facility observed between the walk-in freezer and exterior wall due to a disorganized collection of materials such as cardboard, containers and equipment.
  • Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food. Facility is holding precooked egg rolls and fried chicken at room temperature during peak business hours to be reheated to order. Documentation to support the time for which the food is held at room temperature and when the food must be disposed of (4 hours) is not being maintained.
  • Several raw animal foods, such as fish and pork, were stored above ready to eat foods in the walk-in cooler.
  • Several foods, such as precooked egg rolls and fried chicken, in the walk-in cooler are stored open with no covering.
  • Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the refrigerated food preparation unit, is not being date marked. Foods prepared within the facility and then frozen are not being date marked with the date of preparation, the date of freezing or the date the food is removed from the freezer.
  • Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use.
  • Equipment food contact surfaces and utensils are not being immersed for a minimum of 10 seconds in the chlorine sanitizing compartment of the manual ware washing sink.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed a personal article of clothing (a jacket) stored on top of a bag of onions at the rear of the facility. **CORRECTED** Observed a pair of nail clippers stored on a shelf above the refrigerated food preparation unit within the kitchen. **CORRECTED**
