Greek Meat Guy fouls inspection in Easton; Gyro knife and the fry cutter were covered with food debris, not correctly cooling octopus

The City of Easton conducted an unannounced retail food inspection on 2/12/2020. As a result of that inspection, and due to the severity of the specific violations the Greek Meat Guy was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 11 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Beef was being placed onto skewers however the beef was allowed to remain at room temperature for longer than necessary because only one food employee was working in the facility. The prep was completed and the meat was placed into the walk-in cooler at my instruction.
  • The floor in the front kitchen area of the food facility is extremely dirty and is in need of cleaning. Clean the entire kitchen floor.Observed wet wiping cloths in the front kitchen area, are not being stored in sanitizing solution between uses. Correct this practice immediately.
  • A sanitizing solution was not available for use in the front kitchen area. Prepare a solution immediately and at all times.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Chicken was observed thawing at room temperature on a prep table, which is not an approved thawing method. Two bags of chicken were in a tub of water. Discard the water and place all of the meat into the walk-in cooler to thaw under refrigeration temperatures.
  • The gyro knife and the fry cutter were covered with food debris. Dismantle the knife and cutter and clean and sanitize all parts.
  • The food managers certification is not posted for public viewing. Post your certification.
  • A floor tile under an under-counter refrigerator is cracked and pieces are missing. Replace this tile.
  • Observed wiping cloths in extremely unclean condition in front kitchen area. Remove the soiled cloths from use immediately and begin to use clean wiping cloths.
  • Observed octopus being cooled in refrigerator in a container with a tight-fitting lid, which is not a proper cooling method. Remove the lid and place the octopus into the walk-in freezer to cool it rapidly.
  • The fire suppression system in the exhaust hoods has not been serviced since August of 2018 as indicated by the tag on the system. Contact your service company and have them service the fire suppression system.
  • The table under the gyro broiler and char broiler, the prep unit and the tables in the front kitchen all require cleaning. Clean all of the equipment.
