The Chester County Health Department conducted an unannounced retail food inspection on 6/15/2020. As a result of that inspection, and due to the severity of the specific violations the Han Dynasty Chinese Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Cooked chicken was held at 50 °F, in the cook line area, rather than 135°F or above as required. DISCARD chicken and ensure that all hot foods are 135 F and above at all times.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Purchase test strips within 24 HOURS and ensure that sanitizer solution is checked daily.
  • Observed eggs being stored at room temperature. DISCARD eggs and ensure all products that are kept in the cold holding units are 41 F and below at all times.
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Repair mechanical dishwasher within 24 HOURS. DO NOT USE UNTIL REPAIRED. Employees must wash all utensils/equipment in the three compartment sink until repaired.
  • Observed several containers of food throughout the facility without a covering. Ensure that all food products are covered at all times to prevent contamination.
  • Multiple containers of food were observed with a towel as a cover. Remove all towels and ensure that food products are covered with a smooth, nonabsorbent material.
  • Observed raw chicken thawing at room temperature. This is not an approved thawing method. Chicken was placed in the walk-in refrigerator. Ensure that frozen foods are thawed under a cold continuous flow of water or in the walk in refrigerator or other approved thawing methods.
  • Facility does not practice proper date marking. No date of preparation or date to discard is present on food containers throughout facility. Provide a date marking system and label all food containers stored in the cold holding units with the date of preparation or the date to discard. Ensure all food product is discarded seven (7) days or less after being stored with the day of preparation counting as the first day. Comply today and every day.
