The inspector made the following comments in support of the violations found during the inspection:
- Cutting boards on bain maries must be washed, rinsed and sanitized at least every 4 hours.
- In the customer grab & go refrigerator, some prepackaged foods such a cheese cubes and dirt dessert are not labeled properly with ingredients, sub-ingredients and allergens. Provide revised individual product labels or post labeling information on merchandiser.
- Clean & sanitize the table mounted can opener.
- Make repairs to eliminate the leak from the sprayer hose of the 3-bay sink. Sprayer hose must be repaired so it does not extend below the rim of the sink. Department recommends installing a new faucet which has a sprayer hose and spout.
- Make repairs to eliminate the leak from under the hand wash sink in the kitchen.
- Replace missing wall tiles by mop sink.
- Replace missing ceiling tiles in kitchen.
