Health Department slaps Iron Hill Brewery & Restaurant in North Wales with 17 violations; fails 8th inspection since October 2016

The Montgomery County Department of Health and Human Services Office of Public Health (MCOPH) conducted an unannounced retail food inspection on 2/11/2020. As a result of that inspection, and due to the severity of the specific violations the Iron Hill Brewery & Restaurant in North Wales was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 17 violations were found and include one or more violations determined to be food borne illness risk factors.

This most recent inspection marks the eighth, “out of compliance” inspection since October 2018 with the Iron Hill Brewery only passing 2 inspections during that time:

  • October 27, 2016- 10 violations
  • February 13, 2017- 8 violations
  • October 4, 2017- 8 violations
  • April 8, 2018- 11 violations
  • November 13, 2018- 19 violations
  • February 13, 2019- 8 violations
  • February 14, 2019- 0 violations
  • April 4, 2019- 0 violations
  • September 16, 2019- 10 violations

The inspector made the following comments in support of the violations found during the inspection:

  • Dish rags and cleaning spray bottle stored hanging on/in hand sink at front bar hand sink.

  • Hand sink adjacent to large kettle at back prep area lacking paper towels.

  • Bulk food container (flour) stored in open original container at dry pantry shelving. COS – relocated to secured secondary bulk storage container.

  • Facility chemical sanitizing dish machine at front bar unable to display an approved concentration of sanitizer – 0ppm. Facility has voluntarily taken unit out of service during time of inspection. Facility is not permitted to place unit back into operation without written permission from MCOPH. Failure to comply may result in future and immediate legal actions. Facility instructed to provide (fax/email) work order displaying new and approved concentration produced by machine to MCOPH. COS – facility was able to display unit in good working order during time of inspection. Facility was permitted to place unit back into service during time of inspection.

  • Cutting blades of table-top mounted can opener observed unclean.

  • Facility washing food prep equipment without removing day/date stickers. Multiple items observed cleaned and stored on drying racks with stickers still in place. COS – facility removed stickers and re-ran during time of inspection.

  • Facility with TCS food items with expired use by dating – facility voluntarily discarded.

  • Facility with multiple TCS food items lacking discard dating. EHS reviewed date marking procedures – multiple items at facility with approved date markings.
  • Facility storing employee personal use items mixed with retail food items at 1 door reach in freezer (pie freezer) across from walk in cooler.
  • Wet wiping clothes stored outside of sanitizer buckets at multiple food prep stations.

  • Deep groves and discoloration observed on multiple cutting boards. COS – facility replaced with new boards from office.

  • Ice accumulation observed on condenser piping at walk in freezer.

  • Access panel below sinks and ice bin at bar areas have been removed raw wood at underside of bar. Facility provided work order for specialty fabrication – facility stated install scheduled for within ten business days.

  • Hand washing sink at unused pizza prep area observed removed during time of inspection. Facility was able to display hot water at location by temporarily attaching handle. Facility was observed actively prepping at area used for quesadilla prep during time of inspection. at follow up will take place on or after 2/12/2020 to ensure facility durable repaired unit into good working order as designed.

  • Facility has repaired multiple food prep cooler reach in drawer handles with tape. Facility instructed to repair to a durable and smooth, non-porous and easily cleaned finish.

  • Unisex employee restroom toilet room lacking lidded/covered trash receptacle.

  • Walls and caulking of dish machine / wall interface at ware washing unclean with mold like growth.
