Health Dept hits Antonios Brick Oven in Malvern with 8 violations; food residue and debris was observed on bottom shelving of all refrigerators in right storage area

The Chester County Health Department conducted an unannounced retail food inspection on 2/25/2020. As a result of that inspection, and due to the severity of the specific violations Antonio’s Brick Oven Pizzeria and Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed raw egg mixture stored over diced tomatoes in bain-marie across from cook line. Mixture was moved into bottom refrigerator. Ensure that raw eggs are not being stored above other food products. Comply today and every day.
  • The following were observed with uncovered food products: 1. Bain-marie behind front counter. 2. One door continental freezer across from cook line. Ensure that all prepared food products are covered at all times to prevent contamination. Comply today and every day.
  • Observed dirty pan being stored with clean pans below flat top grill. Pan was moved from clean pan storage area during time of inspection. Ensure that dirty equipment is cleaned after use and not stored with clean equipment.
  • An accumulation of food residue and debris was observed on bottom shelving of all refrigerators in right storage area. Clean the bottom shelving of all refrigerators and maintain cleanliness.
  • Two open employee’s beverage containers were observed behind counter area. Discard beverages and ensure that all employee beverages are in closed containers away from food preparation at all times. Comply today and every day.
  • Observed a blue chemical container behind front counter without proper labeling. Ensure that all chemical products are labeled with name of chemical. Comply today and every day.
  • The following were observed without proper date labeling: 1. Grab and go desserts stored in the refrigerator in the dining area. 2. Prepared food products located in the bain-marie behind the front counter. 3. Prepared food products in the bain-marie across from the cook line. 4. Prepared food products in the two door continental refrigerator across from the cook line. Ensure that all prepared foods have proper date labeling. Label all prepared food products located in the areas listed above and comply every day.
  • Observed broken plastic food containers in the one door continental freezer located next to the cook line. Replace broken containers and maintain all equipment in good repair.
