The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 2/27/2020. As a result of that inspection, and due to the severity of the specific violations Heritage Craft Butchers was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed jar of salsa from Brochachos in Canonsburg for retail agent was unable to verify license, Product was pulled and product is not allowed to be sold until verification is received.
  • Observed the upper blade guard has old encrusted food residue. Observed the heating unit in the curing chamber has an accumulation of mold inside of the vents.
  • Food facility HACCP plan does not have all required elements as outlined in the PA Food Code and is missing. The estab does not have any written logs as required to include pH, water activity, temp, Calibration, corrective action, lab results, SOP, GMP. Also, the establishment is having the beef slaughtered at PA Packing and there pork at Haines and there are not records to indicate such.
  • Food Facility is unable to verify the hermetically sealed beef and pork products being offered for sale are from approved sources. Observed the establishment is selling rabbit stew and there are no records or invoices for the rabbit available.
  • Food facility does not maintain and implement written procedures and plans as required in the PA Food Code and based upon HACCP plan.
  • Observed the establishment is vac-packing raw meats without any written documentation to include barriers, temperature logs.
