The Bucks County Department of Health conducted an unannounced retail food inspection on 6/19/2020. As a result of that inspection, and due to the severity of the specific violations Grand Buffet Hibachi & Sushi in Warminster was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

There is no food safety manager certified by this Department (CFSM) on duty as required. A CFSM must be on duty at all times the facility is open and/or food is being prepared. The facility has one CFSM but this person was not available at the time of inspection.  New Violation.  
Self-service is not allowed at this time due to COVID-19 regulations. Employee must dish food for customers if buffet is to remain in place.  Corrected On-Site.  New Violation.  
Hand wash sink was blocked with items inside. Hand sinks must remain accessible at all times and be used for nothing but hand washing.  New Violation.  

Walk-in ambient temperature was 52 degrees F. Some food items were above 41 degrees F. All time/temperature control for safety (TCS) foods discarded. This unit should be serviced immediately. Discontinue use for TCS foods until it maintains food at a temperature of 41 degrees or below.

Some food items in prep unit (top right side) were not being held at or below 41 degrees F. Affected items were discarded. Cool all food properly before placing in unit for cold hold. Items in left side and ambient temperatures in doors below were appropriate.  New Violation. To be Corrected By: 06/19/2020  

Times and temperatures for buffet foods not recorded in log book. If time is used as a control, logs must be kept to ensure food is not held for more than 4 hours before using or discarding.

This is a repeat violation. If failure to comply is noted upon compliance inspection, buffet will be removed.  Repeat Violation.  

Screen door kickplate has large gap. Repair to prevent pests from entering food prep areas.

Front door was open into the buffet area upon arrival.  New Violation. To be Corrected By: 06/26/2020  

Tongs stored on edge of trash can between uses. This is not a cleaned and sanitized surface. Store on clean food prep surface between uses or in clean, dry container.

Single use containers used as scoops. Scoops must have a handle that sticks up above surface of food.  Corrected On-Site.  New Violation.  

Wet stacking observed. Allow all cleaned and sanitized utensils and equipment to air dry before stacking for storage to prevent bacterial growth.  New Violation.
