The Pennsylvania Department of Agriculture  conducted an unannounced retail food inspection on 5/22/2020. As a result of that inspection, and due to the severity of the specific violations The Red Brick Restaurant & Lounge was cited as being, “Out of Compliance” with Pennsylvania food safety regulations. During this inspection a total of 6 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Mixer had food residue underneath the mixing arm, back splash guard and outer casing surfaces and is not being cleaned at a frequency to preclude dust, dirt and dried food accumulation.
  • Inside walk-in-cooler door was observed heavily worn exposing bare wood and having a heavy accumulation of black filth.
  • Inside walk-in-cooler ceiling was observed sagging and buckling at the seams which had an accumulation of mold and black streaks.
  • Walk-in-cooler condenser vents were observed with a heavy accumulation of dust.
  • Side wall between oven & fryer & floor under fryers have a heavy accumulation of dried food, grease and debris.
  • Observed Food Employee preparing ready to eat food without gloves.
  • Food facility is using chlorine sanitizer at an extremely high concentration of 500ppm, not approved in the Code of Federal Regulations for food contact sanitizing at this level.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

Update: 525/2020; The Pennsylvania Chronicle received statements from “Lois Kem” on Facebook suggesting she works at the restaurant. The designated, “Person in Charge” during the inspection was Lois Kemerer according to the report:

Kem: these inspections make it sound so bad and as far as the the walkin cooler gos we had it completely redone and the company that did it did not do it right been fighting for them to fix it right

Kem: not our fault the machine had a failure its rented and they service it

PA Chronicle: How much bleach are you using? Is that safe for your customers? “Food facility is using chlorine sanitizer at an extremely high concentration of 500ppm, not approved in the Code of Federal Regulations for food contact sanitizing at this level.”

Kem: hide behide a pa restaurant name you only lnow what you read in a report why dont you get certification and come out yourself to inspect these place you criticize i dont think you even leave your home maybe you will get a virus.

The failure to be found, “In Compliance” is not new for the restaurant having been cited not only during regular reviews but requiring follow-up reviews that required Type 2 and Type 3 follow-up inspections (2nd and third visits) with the restaurant being, “Out of Compliance” 7 times in the last 23 months:

THIS FACILITY􀂶S LICENSE HAS BEEN SUSPENDED DUE TO IT􀂶S HISTORY OF FEC NONCOMPLIANCE (SECTION 5703(i) OF THE RETAIL FOOD FACILITY SAFETY ACT).

A “CLOSE BY ORDER” PLACARD WAS PLACED ON THE FRONT ENTRANCES AND IT SHALL NOT BE REMOVED, COVERED OVER OR MOVED, EXCEPT BY A PDA STAFF EMPLOYEE UNDER PENALTY OF LAW.

FACILITY WILL CEASE ALL OPERATIONS INCLUDING FOOD PREP AND WILL NOT BE ALLOWED TO OFFER FOOD TO THE PUBLIC BY CUSTOMER TRAFFIC OR BY PHONE IN ORDERS UNTIL APPROVAL IS OBTAINED BY THE INSPECTING AGENT. ONCE AN OVERALL IN COMPLIANCE HAS BEEN OBTAINED AND ALL PREVIOUS FINES AND FEES HAVE BEEN PAID, ONLY THEN WILL FACILITY BE ALLOWED TO OPERATE.
