The Allegheny County Health Department’s Food Safety Program conducted an unannounced retail food inspection on 8/5/2020. During this inspection a total of 8 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Cooked chicken next to cook line is at 44° F.*
- Only preparation dates are being used for date marking.
- Fan in walk in cooler is accumulating dust and debris.
- Racks in walk in cooler, preparation cooler, and sushi stand up cooler are accumulating debris.
- Black residue is accumulating inside the ice machine.
- Dichlorovos pest strip found near the mop sink.
- Sushi knife sharpener is duct taped.
- Floors underneath cook line are soiled with old food debris.
- Grease hood is building up with excessive grease.
- Miscellaneous items are stored in mop sink
*The temperature danger zone is food temperatures between 41 and 135 degrees Fahrenheit and the most rapid bacteria growth occurs between 70 and 125 degrees Fahrenheit. The longer food sits in this temperature range, the greater the risk that bacteria will begin to grow on food. These violations are considered, "Food Borne Illness Risk Factor" violations.
