The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on 8/28/2020. As a result of that inspection, and due to the severity of the specific violations Dunkin’ Donuts was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 6 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Scoop being stored in the ice storage bins with handle in contact with the ice.
- Multiple servings of TCS food in Bain Marie units held in the range of 50°F – 57°F.
- Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in Bain Marie equipment.
- Equipment food contact surfaces and utensils are not being immersed in the hot water sanitizing compartment is provided at the manual ware washing equipment.
- Bain Marie unit not holding required temperature. Ambient air temperature of Bain Marie was observed at 47 degrees F during this inspection.
- Slime residue forming on the interior surfaces of the ice machine. Cleaned at the time of this inspection.
