Allentown Health Bureau conducted an unannounced retail food inspection on 1/12/21. As a result of that inspection, and due to the severity of the specific violations Edible Arrangements was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 9 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- The Food Facility Operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation.
- The chlorine concentration in the sanitizing solution of the 3-bay ware wash sink was 10 ppm, rather than 50-100 ppm as required.
- Ceiling vents and tiles throughout the kitchen area of the food facility are extremely dirty, dusty, and in need of cleaning.
- Floors throughout the kitchen and walk-in cooler areas of the food facility is extremely dirty, dusty, and have a build-up of food-debris; in need of cleaning.
- Food employees observed in the kitchen area, not wearing proper hair restraints, such as nets, hats, or beard covers. REPEAT VIOLATION.
- Observed linens and microfiber towels used to cover grapes stored on trays in the walk-in cooler.
- Interior of the ice machine, a food contact surface, was observed to have food residue and black mold-like build-up, and was not clean to sight and touch.
- Ceiling tiles missing above the walk-in cooler area, and need replaced.
- Food Employee observed donning single use gloves without a prior hand wash. Corrected. REPEAT VIOLATION.
- Plumbing system not maintained in good repair – observed water leaking at the ice machine by the walk-in cooler.
