The Allegheny County Health Department’s Food Safety Program conducted an unannounced retail food inspection on 7/16/2020. As a result of that inspection, and due to the severity of the specific violations K & T Fish & Chicken was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 11 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Cooked chicken wings in a large plastic bin in the kitchen area measure 125°F. Operator states that he allows the chicken to cool in the kitchen for an hour before moving it to the walk-in cooler.
- Facility is not recording cooling temperatures on charts. Copies of cooling charts provided.
- Various foods (bags of cut vegetables, cups of cheese sauce, slices of cheesecake) are being held without discard dates.
- Raw chicken thawing in walk in cooler is stored above boxes of macaroni and cheese. Correct storage order poster provided.
- Water is pooling around the water heater in the basement. There is a significant amount of standing water in this area which appears to be a result of the water heater draining directly onto the floor. Operator states that they have spoken with landlord, but this problem has not been corrected. Basement smells strongly of sewage.
- At the beginning of the inspection, there was a plastic container sitting in the hand sink in the kitchen.
- There are numerous rodent droppings around the perimeter of the basement near the hot water heater. It is difficult to determine if these droppings are old or new.
- Spray bottle of Window Cleaner is stored next to hot sauces on shelf under table near register.
- There is duct tape on the door shelf in the HotPoint freezer.
- The floor tiles around the walk-in cooler and walk-in freezer are damaged.
- Mop is stored in mop bucket in employee restroom.
