The inspector made the following comments in support of the violations found during the inspection:

  • Install new vinyl-faced drop ceiling tiles around the perimeters of the hoods in the mainline kitchen area. Note: Ceiling tiles have been painted- this is NOT a satisfactory form of correction.
  • Roach activity is still present in facility, mostly along the mainline hood area. Today, live and dead roaches of various life cycles were observed in multiple pest traps but were not seen crawling around. Most recent pest control report noted that roach activity is continuing despite the on-going treatments. Facility must take more aggressive measures to control, reduce and eliminate roaches. Complete/continue the following: * Certified pest control operator must service 2-4 times per month. Submit pest reports to Department PROMPTLY * Maintain facility surfaces, plumbing and food service equipment in clean condition and good repair * Inspect incoming shipments for vectors * Keep all foods covered in storage * Eliminate standing water and other vector harborage conditions. ENSURE PEST CONTROL OPERATOR INSPECTS ABOVE KITCHEN’S DROP CEILING AND TREATS IF NEEDED. * Keep exterior openings closed and tightly sealed * Remove any/all roaches (if found) and disinfect the affected area.

* The restaurant was found, “In Compliance” but with cockroaches present in decreasing numbers, “Roach activity continues to significantly decrease per Department observations and most recent pest control report. Facility must continue to take measures to control, reduce and eliminate roaches. Complete/continue the following: * Certified pest control operator must service 2-4 times per month. Submit pest reports to Department * Maintain facility surfaces, plumbing and food service equipment in clean condition and good repair * Inspect incoming shipments for vectors * Keep all foods covered in storage * Eliminate standing water and other harborage conditions * Keep exterior openings closed/sealed * Remove any/all roaches (if found) and disinfect the affected area.”
