The Pennsylvania Department of Agriculture¬† conducted an unannounced retail food inspection on 2/25/2020. As a result of that inspection, and due to the severity of the specific violations Di Salvo’s Station was cited as being, “Out of Compliance” with Pennsylvania food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Clean & sanitized salad plates, placed upside down in dirty carriages containing stagnant water and food debris in the dish washing area
  • A food employee was observed touching sandwich buns – a ready to eat food – with bare hands while slicing them. Spoke with management. CORRECTED ON SITE
  • Microwave on main prep line was observed with dried food debris inside.
  • No sign or poster posted at the hand wash sink in the men & women’s up stairs bathroom and the women’s down stairs bathroom area to remind food employees to wash their hands.
  • Refrigerated ready to eat, time/temperature control for safety chicken tenders, sliced beef, pasta marinara, french toast, fried chicken, & breakfast sausage and bacon prepared in the food facility and held for more than 24 hours, located in the walk in cooler, is not being date marked.
  • Commercially processed refrigerated, ready to eat, time/temperature control for safety deli ham, located in the walk in cooler, and held more than 24 hours, is not being marked with the date it was opened. REPEAT VIOLATION (2/28/19)
  • Floor underneath the fryer and grill side in cooks section not cleaned at a frequency to preclude accumulation of dirt and soil. REPEAT VIOLATION (2/28/19)
  • The food facility does not have a traditional hand wash sink located in both up & downstairs bar areas. All cups, glasses and flatware will be taken to the warewash area for cleaning and sanitizing. The 3 compartment sink in the bar area was arranged to be a hand wash sink. Signs were present HOWEVER; soap and paper towels were not available at the sink in both bar areas.
  • 1 of 2 mixers was observed with an accumulation of dried food underneath the mixing arm. REPEAT VIOLATION (2/28/19)
  • Can opener was observed with dried food accumulation on the blade and blade guard.
  • Downstairs soda dispensing nozzle and holster was observed with an accumulation of pink slime inside.
  • Slicer was observed with dried food accumulation on the back of the blade and blade guard.
  • Observed an accumulation of dried food and heavy accumulation of carbon build up on back corner wall and floor under prep/cooks line area. 3RD REPEAT VIOLATIONS (1/31/18 & 2/28/19)
