The City of Allentown conducted an unannounced retail food inspection on 6/24/2020. As a result of that inspection, and due to the severity of the specific violations the Linden Mini Market & Deli was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 11 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Deli meats in the deli case were not date marked within 48 hours of opening. Date mark all deli meats upon opening. You have 7 days from the time of opening to use the deli meats, then they must be discarded.
  • Baby Formula in the sales area was out of date by several months. The cans were removed from the shelves. Baby formula is not to be available for sale past the expiration date.
  • The handwashing sink in the deli area had the hot water turned off. The hot water must remain on for all sinks at all times. The water was immediately turned on.
  • The Person in Charge did not demonstrate adequate knowledge of food safety. The PIC was observed cleaning the deli slicer with a wet rag and not washing, rinsing and sanitizing. The PIC also had the hot water turned off to all the sinks in the facility.
  • Items were piled in the handwashing sink in the deli prep area. The food employee admitted that they don’t use this sink very often. Handwashing sinks should not be blocked and should be clear for use at all times.
  • The Food Employee is not using sanitizer test strips to determine sanitizer concentration. Purchase appropriate test strips for testing sanitizer concentration.
  • PIC was not cleaning the deli slicer properly as he was wiping it down with a damp rag. The wash, rinse, and sanitize procedure was explained to him. Wash, rinse, and sanitize the deli slicer.
  • Hot water was turned off to the handwashing sink and the 3 bay sink at the time of inspection. Ensure hot water is available at these sinks.
  • Paper towel dispenser empty at the handwash sink in the deli area and the bathroom. Ensure there are paper towels stocked at the sink at all times.
  • Soap was not available at the handwash sink in the deli area and the bathroom. Ensure there is soap stocked at the sink at all times.
  • A general cleaning of the facility is needed, particularly behind the counter, in the food prep area, and in the refrigerator area where there was a buildup of dead insects. Clean these areas and reorganize them.
  • The water spout on the 3 bay sink is missing and the water, when turned on, is flowing up and all over the wall. Fix the sink spout so it flows into the sink bowls.
  • The grocery store showed a buildup of debris in the store as there were garbage bags and boxes sitting in the corner by the back door. Take out the garbage.
  • Food facility inspection indicates evidence of ants in the refrigerator area. The facility does have a pest control plan in place. Clean up the dead ants and increase pest control measures.
