The Pennsylvania Department of Agriculture¬† conducted an unannounced retail food inspection on 2/21/2020. As a result of that inspection, and due to the severity of the specific violations Madero Cantina was cited as being, “Out of Compliance” with Pennsylvania food safety regulations. During this inspection a total of 9 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed thawed Tuna in kitchen refrigerator still in vacuum packages. Items are clearly marked to remove from vacuum packaging prior to thawing. Reviewed with management (Repeat violation 3/16/17)
  • Paper towel dispenser empty at the hand wash sink in the bar area. COS
  • Working containers in bar / service area, used for storing chemicals, cleaners taken from bulk supplies, were not marked with the common name of the chemical. COS, marked during inspection
  • Raw chicken was stored above raw vegetables in the 2-door refrigerator in back storage. COS, reviewed. Repeat violation (3/16/17)
  • Assorted foods in the prep refrigerators and kitchen refrigerator area stored open with no covering.
  • Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the kitchen refrigerators, is not being date marked. Reviewed with management. Repeat violation (3/17/15 and 3/16/17)
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing glass washer at the bar was 0 ppm, and not 50-100 ppm as required. COS, sanitizer bottle was empty, replaced and read 50 ppm. Rewash all glassware used since last test on machine
  • Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing kitchen dishwasher was ppm, and not 50-100 ppm as required. Do not use until repaired, wash all items in three basin sink. Repeat violation (3/8/16)
  • Old food residue, dishes and utensils observed in the hand wash sink in the kitchen, indicating uses other than hand washing. COS Repeat violation (2/25/19)
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • No sign or poster posted at the handwash sink in the bar area to remind food employees to wash their hands. COS
