The Chester County Health Department conducted an unannounced retail food inspection on 1/28/21. As a result of that inspection, and due to the severity of the specific violations the Marchwood Tavern was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 4 violations were found.
The inspector made the following comments in support of the violations found during the inspection:
- Provide both QAC and Chlorine test kits.
- Toilet rooms have not been cleaned from the day before: trash cans full, toilet paper on floor, seats and handles not cleaned. Clean immediately and every night. Additional disinfection of hand contact surfaces shall be conducted throughout the day.
- Improper Salad Dressing Ice bath. Observed individual portioned salad dressing placed Temperatures exceeded 41 degrees F. As discussed with the staff, it is ideal to keep these individually portioned dressings in a refrigerated case. Maintain all potentially hazardous foods in cold storage at 41 degrees F or below. Note: ice baths will not be efficient in keeping temperature control of this product since the portions are individually containered and have very little contact with the sides of the “ice bin”.
- Kitchen. Observed two knives stored between a worktop cooler and steam table. Do not store knives between equipment. These areas are not easily cleanable. Knives were removed for washing at the time of inspection.
