The Bucks County Department of Health conducted an unannounced retail food inspection on 6/10/2020. As a result of that inspection, and due to the severity of the specific violations Peng Yuan Chinese Restaurant was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 7 violations were found.

The inspector made the following comments in support of the violations found during the inspection at the June 10, 2020 inspection:

The hand wash sink near the walk in cooler was blocked with items. Ensure hand sinks are easily accessible. Also, the paper towels were not being provided at this hand sink. Fix to ensure paper towels are provided.

The hand sink near the cook line had an item stored in it. Do not store items in the hand sink. Hand sinks must only be used for hand washing and accessible at all times. The item was removed.  New Violation. To be Corrected By: 06/10/2020

*Observed employee drop a piece of chicken on the floor and then place it back in the container to be used. Advised owner that if he contaminates food it must be discarded immediately. Owner discarded the chicken.  Corrected On-Site.  New Violation.
*All food contact surface equipment requires a detailed cleaning. Thoroughly clean and sanitize all equipment, utensils and containers.  Repeat Violation.
*Garlic in oil, bean sprouts, and egg wash sitting out were not at a safe temperature. These are time temperature control for safety foods and must be kept at 41°F or below. These were all discarded. Ensure these are kept refrigerated.  Corrected On-Site.  New Violation.
*The prep top unit is not working. No time temperature control for safety foods were stored in the bottom area of this unit. However, there was some time temperature control for safety foods that were in the top portion. All these were discarded. Do not store time temperature control for safety foods in this unit. Owner stated they have ordered a brand new unit which will be here on 6-15-20.  New Violation. To be Corrected By: 06/10/2020
Food workers are not wearing hair restraints as required.
Employees shall wear hair restraints such as hats, hair coverings or nets, that are effectively designed and worn to keep their hair from contacting exposed food; clean equipment, utensils and linens; and unwrapped single-service and single-use articles. Employee provided a hat.  Corrected On-Site.  New Violation.
All non-food contact surface equipment in the kitchen is unclean with grease, grime and food debris. Degrease, clean and maintain all equipment.  Repeat Violation.
The floors and walls throughout the facility are soiled with food debris, grease and grime. Degrease, clean and maintain. There is excessive junk, unused equipment, etc throughout the kitchen and all the floor. It is difficult to inspect the floors for pests. Remove and discard any unnecessary items and equipment from the kitchen to provided ease of cleaning.  Repeat Violation.

A follow-up inspection on June 17, 2020 found 2 violations continued with the inspector reporting:

Food contact surfaces are still unclean. Improvements have been made. Continue to thoroughly clean and sanitize all equipment, utensils and containers.  Repeat Violation.  
Some non-food contact surfaces are still unclean. Improvements have been made but continue to degrease, clean and maintain.  Repeat Violation.
