The inspector made the following comments in support of the violations found during the inspection:

  • There is no food safety manager certified by this Department (CFSM) on duty as required. A CFSM must be on duty at all times the facility is open and/or food is being prepared. A completed application(SA-71)for CFSM, or proof of enrollment in an approved safety class must be submitted to the Department. Facility’s Food Safety Manager certifications have expired.
Renew.  New Violation. To be Corrected By: 06/30/2020
  • Upon BCDH inspector arrival, dough cutter and debris were found in the handwash sink. A handwashing facility may not be used for purposes other than handwashing. Items were removed during inspection. Sink to be cleaned and sanitized.  Corrected On-Site.  New Violation.
  • Sliced cheese in the prep unit was measured at 50°F.
Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.
    Product was discarded.
All other items measured in this unit were within proper temperature range.  Corrected On-Site.  New Violation.

*The temperature danger zone is food temperatures between 41 and 135 degrees Fahrenheit and the most rapid bacteria growth occurs between 70 and 125 degrees Fahrenheit. The longer food sits in this temperature range, the greater the risk that bacteria will begin to grow on food. These violations are considered, "Food Borne Illness Risk Factor" violations.
