The Chester County Health Department conducted an unannounced retail food inspection on 6/10/2020. As a result of that inspection, and due to the severity of the specific violations Sakura Hibachi & Sushi was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.

The restaurant was cited as being, “Out of Compliance” in its last regular inspection on April 10, 2019 with 13 violations. On April 17 it passed a follow-up inspection with no violations.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed overfull bucket of soiled wiping cloths stored outside by the rear kitchen door. Store soiled wiping cloths inside a clean receptacle with tight-fitting covers.
  • Observed leaky faucets at both 3 bay faucets and at food prep sink. Hot water is being manually shut off under food prep sink due to leaks. Make necessary repairs.
  • Overfull outside grease waste receptacle & other waste receptacle with lid open and almost full. Waste grease was observed draining onto pavement and in the direction of a storm water control area. Contact your waste grease removal service and schedule a service pick up today.
  • The food facility is in need of a full deep cleaning under and behind food service equipment. Observed grime/debris accumulating in the floor drain under the pre-rinse sink at mechanical dishwasher. Observed significant grease accumulation on floor around deep fryers.
  • Leader bain marie across from cook line: door gasket missing on left door and significantly torn door gasket on right door. Make necessary repairs.
  • Observed mold-like growth inside the ice machine. Empty ice and clean and sanitize today.
  • Significantly stained and bulging ceiling tiles inside men’s restroom. Investigate source of potential water leak and make necessary repairs & replace ceiling tiles.
  • Observed the ambient temperature of the walk-in refrigerator at 48F-50F. Only one fan was observed working on the condenser. The following foods were observed above 41F: cooked chicken 48F, crab rangoon filling 47F & cooked pasta 56F. Observed ambient temperature of the Leader bain marie at 48F-50F across from the cook line. The following foods were observed above 41F: raw chicken 49F, cooked chicken 45F & raw shrimp 55F. All foods were discarded during this inspection. Do not use these units until adequate repairs have been completed and the units are operating at 41F or less.*

*The temperature danger zone is food temperatures between 41 and 135 degrees Fahrenheit and the most rapid bacteria growth occurs between 70 and 125 degrees Fahrenheit. The longer food sits in this temperature range, the greater the risk that bacteria will begin to grow on food. These violations are considered, "Food Borne Illness Risk Factor" violations.
